- Preheat oven to 300°F (150°C)
- Gently pick through crab meat, removing any shells
- Whisk egg yolks with sugar until pale
- Heat cream until just simmering
- Slowly temper egg mixture with hot cream
- Fold in crab meat
- Strain mixture into ramekins
- Bake in water bath for 25-30 minutes
- Chill completely
- Sprinkle sugar on top
- Torch until golden and crisp

- Use the freshest crab possible
- Don't overwork the crab meat
