Ingredients
  

  • 1 lb fresh king crab meat
  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Salt and white pepper to taste
  • Additional sugar for caramelizing

Method
 

  1. Preheat oven to 300°F (150°C)
  2. Gently pick through crab meat, removing any shells
  3. Whisk egg yolks with sugar until pale
  4. Heat cream until just simmering
  5. Slowly temper egg mixture with hot cream
  6. Fold in crab meat
  7. Strain mixture into ramekins
  8. Bake in water bath for 25-30 minutes
  9. Chill completely
  10. Sprinkle sugar on top
  11. Torch until golden and crisp

Notes

  • Use the freshest crab possible
  • Don't overwork the crab meat
  • Chill thoroughly before caramelizing
