Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup whole milk
  • 1 large egg
  • 1/4 cup beef tallow melted
  • 2 tablespoons honey optional

Method
 

  1. Preheat oven to 400°F (200°C). Place skillet in oven to heat.
  2. Whisk dry ingredients in a bowl.
  3. Mix wet ingredients in another bowl.
  4. Combine wet and dry ingredients.
  5. Add beef tallow to hot skillet, then pour in batter.
  6. Bake for 20-25 minutes until golden.
  7. Cool slightly before serving.
