- 1/3 cup freshly squeezed lime juice about 3 limes
- 1/4 cup olive oil
- 3 garlic cloves minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 tablespoon honey
- 1/4 cup fresh cilantro chopped
- Salt and black pepper to taste
- 2 pounds chicken thighs, breasts, or drumsticks
In a mixing bowl, whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, honey, cilantro, salt, and pepper.
Place the chicken in a resealable bag or shallow dish. Pour the marinade over the chicken and coat it well.
Seal the bag or cover the dish. Refrigerate for at least 2 hours, ideally overnight.
Heat your grill to medium-high. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F.
