- Preheat oven to 325°F (163°C).
- Pat the roast dry and coat it evenly with the seasoning mixture.
- Sear the roast in olive oil until golden-brown on all sides.
- Sauté carrots, celery, onion, and garlic in the same pot.
- Deglaze with beef broth and red wine.
- Return the roast to the pot, add herbs, and cover.
- Braise in the oven for 3-4 hours until tender.
- Rest for 15 minutes before slicing and serving.
