Ingredients
  

  • 3-4 lbs beef arm roast
  • 2 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 2 cups beef broth
  • 1 cup dry red wine optional
  • 4 large carrots peeled and cut into chunks
  • 4 celery stalks chopped
  • 1 large yellow onion sliced
  • 4 garlic cloves minced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Method
 

  1. Preheat oven to 325°F (163°C).
  2. Pat the roast dry and coat it evenly with the seasoning mixture.
  3. Sear the roast in olive oil until golden-brown on all sides.
  4. Sauté carrots, celery, onion, and garlic in the same pot.
  5. Deglaze with beef broth and red wine.
  6. Return the roast to the pot, add herbs, and cover.
  7. Braise in the oven for 3-4 hours until tender.
  8. Rest for 15 minutes before slicing and serving.
