Preheat and Prep:
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
Make the Streusel Topping:
- In a small bowl, combine the rolled oats, flour, brown sugar, and cinnamon. Add the cold, cubed butter and mix with your fingers until the mixture resembles coarse crumbs. Set aside.
Prepare the Cake Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the softened butter, sour cream, eggs, and vanilla extract. Mix until just combined—be careful not to overmix!
Assemble and Bake:
- Pour the batter into the prepared pan and spread it evenly. Sprinkle the oatmeal streusel topping over the batter, covering it completely. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve:
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. Slice and serve warm with a cup of coffee or tea.
Notes
- Add Fruit: Fold in fresh blueberries or diced apples into the batter for a fruity twist.
- Go Nuts: Add chopped walnuts or pecans to the streusel for extra crunch.
- Make It Gluten-Free: Swap the all-purpose flour for a gluten-free blend.
- Add a Glaze: For extra sweetness, drizzle a simple glaze made of powdered sugar and milk over the cooled cake.
