Ingredients
  

  • 3-4 lbs beef short ribs
  • 2 tablespoons oxtail seasoning
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 cup red wine optional
  • 4 carrots peeled and chopped
  • 4 celery stalks chopped
  • 1 large onion sliced
  • 4 garlic cloves minced
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Method
 

  1. Preheat oven to 325°F (163°C).
  2. Season the ribs with oxtail seasoning, smoked paprika, garlic powder, onion powder, black pepper, and salt.
  3. Sear the ribs in olive oil until browned on all sides.
  4. Sauté carrots, celery, onion, and garlic in the same pot.
  5. Deglaze with beef broth and red wine.
  6. Return the ribs to the pot, add herbs, and cover.
  7. Braise in the oven for 3-4 hours until tender.
  8. Rest for 15 minutes before serving.
