- Preheat oven to 325°F (163°C).
- Season the ribs with oxtail seasoning, smoked paprika, garlic powder, onion powder, black pepper, and salt.
- Sear the ribs in olive oil until browned on all sides.
- Sauté carrots, celery, onion, and garlic in the same pot.
- Deglaze with beef broth and red wine.
- Return the ribs to the pot, add herbs, and cover.
- Braise in the oven for 3-4 hours until tender.
- Rest for 15 minutes before serving.
